I agree with what you have there and I'll add:
White Castle Slider - Being from the west coast I've never had a chance to try White Castle burgers (and I don't mean the frozen ones from the grocery store). I've always wanted to ever since I heard about 'em from Wizard Magazine and definitely after Harold and Kumar. I would road trip it across the country just to go to a White Castle.
The pork Bourdain had in Bali Indonesia - I love crispy pork roasted over an open spit, the one Bourdain had in Bali looked superb. I almost died salivating watching that episode.
Lombardi Pizza - There's another pizza joint I'd like to go to in New York, but I forget the name. In the end I'd just love to try NY style pizza baked in a super hot brick oven, thin crust with some carbon on the bottom and that crackle with gooey cheese on top.
Philly Cheese Steak from Pat's and Geno's - Love cheese steaks! Curious to see who joint I would favor most.
Peter Lugar Steakhouse - I have yet to try a really awesome steak.
Bugs - Although squeemish about it, I'd also like to try a variety of bugs. I hear they taste good, good for you (I hear they contain more protein than beef w/out all the fat), and the crispy texture is nice. Plus there's plenty of them everywhere. So it seems the only thing stopping many people from eating them is that they've grown up with the idea that eating bugs is gross. I think it's sad that many people are missing out because of a mental thing.
El Bulli - Molecular gastronomy is so fascinating. I want to try foods based around this concept first from Ferran Adria.
